Seafood Fried Rice




I got home from work early today, so we decided to go to the mall to get some clothes for the boys to get ready for the cruise. Walking around for a couple hours made us all hungry. We were going to stop by the pizzeria at the mall to have dinner. Unfortunately, they whole area is under construction, so there goes our plan for dinner. I told my husband "let's just eat at home, I can fix something quick for everyone".  And in half an hour, this was what we had for our dinner. Everything I could gather from my fridge went straight to the wok for the fried rice! Even the rice is leftover rice from yesterday. But that's how fried rice supposed to be, being made from leftover old rice. 
Doesn't it look gourmet with shrimp, crab, squid, Chinese sausages, egg and sweet peas? They were all the items that I could find from my fridge. It was quite tasty too, I went for the second serving and packed the leftover for work tomorrow. Yay... I'm gonna have a yummy lunch tomorrow that not from the hospital cafeteria!


 Ingredients:

1. 5 cups of  leftover jasmine rice
2. 3 eggs
3. 1 can of crab meat
4. shrimp, squid (chopped)
5. 2 Chinese sausages (lap xuong)
6. 1/2 cup of sweet peas, minced garlic, chopped green scallions
7. Fish sauce, bot nem (Vietnamese seasoning), sweet soy sauce, black pepper

In a large wok, add chopped Chinese sausage (no oil added) fry until cooked about 5 minutes. Remove and set aside. Add 2-3 tbsp of milk and 2 tbsp water along with 1 tsp fish sauce and 1 tsp bot nem into the eggs and beat well to mix. Return the wok to medium heat and add some oil. Fry the egg until done like an omelet. Remove and set aside
Add 2 tbsp of cooking oil into the wok, add in minced garlic and stir until fragrant. Add in the seafood mixture, green bean and stir fry for 5 minutes. Add in the rice, season it with fish sauce, bot nem, soy sauce and black pepper. Adjust the seasoning to taste and mix the fried rice to combine for about 5 minutes. Add in Chinese sausages and fried egg, break up the egg to mix. Garnish with chopped scallions. Dinner is served. Enjoy!
